Can a moderator of an internet message board see my IP address?

I was wondering if a moderator of an internet message board/forum can see my IP address when he/she reads my post? Or does the moderator have to go out of her way to see my IP address? Or is the IP address not something the moderator can see at all?

The computer at the other end DEFINITELY can see your IP address. Thats necessary for everything internetish. You send a packet of information to the forum and in order to see the results of it appear there, a packet has to be sent back. That IP is address to send that back to. Otherwise you would be typing everything blindly.
The person who owns/operates that computer at the other end (and any along the route) can see the routing IPs for everything.
Whether or not someone else who is ON that machine can see it (such as a moderator) depends on the software and the permissions granted by whoever owns the computer. But its very common to allow moderators to see IPs. Its an important part of being able to moderate a forum. Particularly any forum that allows the moderator to ban a user since they have to be able to tell if the same user is coming in under another name.
ON THE OTHER HAND...
there are people who are determined to get around such things. The keywords to search for would be web proxies, or maybe vpn, which are both ways to "bounce" your activity off of another IP and have that IP bounce responses to you. It wont "hide" the sending IP but it does make it into a different one
